At Mosaic Coffee Co. and Austin St. Coffee Roasters, our goal is to provide you with the finest, freshest, and tastiest coffee in the West Texas region. Our beans are imported around the world from origins such as Brazil, Colombia, Guatemala, Honduras, Ethiopia, and Indonesia. We offer premier profile blended roasts you can find year round as well as single origin and traceable roasts that are more seasonal. If you're a coffee connoisseur or aspiring to be one, we have something for everyone.
We roast our coffee in house on a beautiful, vintage Diedrich roaster. Feel free to drop by and check out our roaster facility in the shop. Coffee isn't the only thing we offer... Our sandwiches, tea, fruity drinks and other menu options are equally as good as our coffee, too!

We are passionate about sourcing coffees that are sustainably grown, ethically sourced, and fairly priced. In a world where specialty coffee has a high price tag, coffee farmers around the world are only paid a fraction of that cost. Almost all of the green beans we source can be traced back to the communities and the people that grow them. We don't mind paying more for our green beans so that the families farming our coffee can receive prices that are more fair than Fair Trade. The goal of Mosaic Coffee Co. is to build relationships with some of these communities that provide our coffee and eventually send groups down as part of mission trips that can help the communities wherever needed. We are excited about connecting our community in Levelland and West Texas with communities around the world.

Pour-over Coffee

When it comes to specialty coffee, we are excited to offer many different styles of pour-over coffee as well as cold brew coffee. We offer Chemex pour-overs, V60 pour-overs and traditional drip coffee. As official Chemex dealers, we are happy to answer any questions about Chemex pour-overs for home use. With a bag of our freshly ground and roasted coffee and your choice of Chemex pour-over, you'll have everything you need to recreate a fabulous pour-over at home.
In addition to pour-overs, we also offer cold brew coffee. We find that the cold brew process brings out a deep, rich flavor and yields a higher caffeine content. Cold brew coffee is produced by allowing fresh grounds to steep in cold water for up to 12 hours. Due to no heat being applied, the coffee tends to be full-bodied and less acidic.
Eventually, we will be offering nitro cold-brew on tap. Our cold brew will be bottled in kegs and nitrogenated where it will be served on tap. The process of nitrogenating coffee makes cold brew naturally sweet! We look forward to offering nitro cold brew very soon!
